Dining on Bake and Shark

I’m lucky to know several people from the island of Trinidad – and many were happy to offer suggestions for things to do, places to go and of course, what to eat.

And everyone said to me – Are you going to Maracas Beach? You must have bake and shark! I found it was a sandwich, but beyond that, I wanted the surprise in discovery when I ordered.

And not wanting to disappoint anyone, I happily went to the beach and had this famous sandwich. And although sometimes one thinks it could be a “tourist” thing since everyone talks about it, on this island, everyone loves bake and shark.

There are several bake and shark shacks at the beach, and its an easy process to order the fish sandwich – but the next part is the key – the condiments. That’s when you see the interesting combinations from various patrons.

Tomatoes, onions, lettuce, ketchup, mustard are standards – but then there’s coleslaw, garlic sauce, green sauce and of course, hot sauce. Everyone makes their own concoction – trying to create the unique combination of tastes that make this sandwich memorable.

I knew it would be tasty and messy – and it was.

Another checkmark on my food bucket list – I’m no Anthony Bourdain or Andrew Zimmer, but I’ve got my list of tasty treats that I’d like to taste – suggestions welcome!
